Pasta with cannelloni beans
1 tablespoon olive oil
1 onion, chopped
3 garlic cloves, chopped
4 slices of turkey bacon, uncooked, chopped
1 can of diced tomatoes
1/2 cup chicken broth
1 can cannelloni beans, drained and rinsed
1 tablespoon fresh basil leaves, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
2 teaspoons sugar

1 pound penne pasta
In a large pan, saute the onions, garlic, and bacon in the olive oil til lightly browned. Add the broth and deglaze, then add the tomatoes, and then the rest of the ingredients. Simmer until the sauce begins to thicken, about 15 minutes. Serve over your cooked pasta. Garnish with a little soy parmesan sprinkling.
