Sausage and egg pizza tart
May 13, 2008 by kitchenetta
My fascination and appreciation of Chef John’s cooking and his website continues to unfold and grow. I just tried another one of his video recipes tonight, and the fans cried out for more!
Sausage and egg pizza brings pizza to a whole new level. Beyond ordinary, it’s extraordinarily good. And even with my own tailored dairy-free modifications, I cannot imagine this dish tasting any better or being scarfed down any quicker than it was tonight!
My market didn’t have any ready-made pizza dough this week, so I used some frozen puff pastry dough I had in my freezer instead. Maybe this would make this dish a tart instead of a pizza? I also substituted the cheeses with soy cheese (there is no soy fontina that I’m aware of - I just used soy mozzarella and soy parmesan). I used a spicy Italian chicken sausage, and it imparted great, zesty flavor. Here is the video, and the ingredients are listed on CJ’s link that I included above. Enjoy!
And here is a piece for you!

I gotta tell you - that pizza does look pretty darn amazing. I agree - Chef John is great - he’s clear on his videos and there’s no question. I made the chicken parmesan - I would change a few things next time - i.e. make my own croutons - I found they got a little mushy. And, I would use chicken pieces that were scallopini rather than chicken breasts - found it just too much per portion. The taste however was very good and I would definitely make it again.
The one thing I didn’t do - big duh to me - I didn’t take any pictures.
I want that now. It looks so good, I’d eat it in 4 minutes. Nice adaptation of the recipe.
Ah! This reminds me of the “Pizza Fiorentina” I had for lunch yesterday! “Pizza Fiorentina” is a traditional Italian pizza made with spinach and egg. A tip if you want to go out for pizza: find a pizza place that serves Pizza Fiorentina (many in London do), and ask for it without the cheese. That’s what I did yesterday and it was fabulous.
I found this dairy-free recipe for it…
