Last week, I made a big batch of homemade chicken soup, and had a bunch of boiled chicken leftover. I took an inspiration from Martha, and made a BBQ pulled chicken sandwich dinner. By pulling the chicken meat from the bones into longer strands and threads, this allowed the meat to be perfectly mixed with about a half bottle of my favorite BBQ sauce. I served it on garlic toast, with a side of peas, and it hit the spot! Enjoy!
BBQ pulled chicken sandwich
1 whole cooked chicken, skin removed, shredded (about 4 cups)
1/2 – 1 bottle BBQ sauce, or your favorite BBQ sauce
1 garlic clove, crushed
3 tablespoons margarine
coarse salt and freshly ground pepper
8 slices whole grain bread
Cook the chicken and the BBQ sauce in a saucepan until heated through.
Meanwhile, in a small bowl, combine the garlic and margarine, and season with salt and pepper. Spread one side of each slice of bread with the garlic spread. Place in toaster oven, spread side up, and toast until golden brown. Make sandwiches with the chicken mixture. Makes 4 sandwiches.
