I saved this recipe a while ago from someone’s blog, because it just sounded so good. My instincts were right on – this soup was hearty and filling. I subbed soy parmesan for the real thing, and the overall flavor was imparted with Italian tones. A wonderful soup with some freshly baked bread. Enjoy!
