This eggplant recipe starts with a quick and easy homemade gravy. The eggplant is sauteed in minimal olive oil, and is not breaded. The result was a luscious combination of flavors, utilizing dairy-free cheeses (mozzarella and parmesan), which could be easily subbed with the real thing for any dairy-consumers out there. It makes a pretty presentation. Enjoy!
