This soup, created by Norene Gilletz in her Healthy Helpings cookbook, is really called Red Lentil, Vegetable & Barley Soup, but I can think of no food more comforting for these Election Day jitters. We had some of this soup tonight, and it truly is calming and soothing. But don’t be fooled by the red lentils – GO OBAMA!!!!!

Red Lentil, Vegetable & Barley Soup

1 tablespoon extra virgin olive oil

3 large onions, chopped

4 cloves garlic, minced

1/4 cup fresh parsley, minced

4 stalks celery, chopped

6 carrots, coarsely chopped

1 large sweet potato, peeled and chopped

2 zucchini, chopped

10 cups water, chicken or vegetable broth

1 1/2 cups red lentils, rinsed and drained

1/2 cup pearl barley, rinsed and drained

1 tablespoon salt, or to taste

1/2 teaspoon pepper

1 teaspoon dried basil, or 1 tablespoon fresh basil, minced

2 tablespoons fresh dill, minced

Heat oil in a large soup pot. Add garlic and onions. Saute on medium heat until golden, about 5 to 7 minutes. Add a little water if vegetables begin to stick. Add remaining ingredients. Bring to a boil, reduce heat and simmer partly covered for 1 hour, or until barley is tender. Stir occasionally. Thin with a little water if soup is too thick. Adjust seasonings to taste. Makes 12 servings.
