Breakfast for dinner. Sometimes there’s nothing better. I saw this recipe on Serious Eats and decided to try it. This was comfort food on a cold evening. Enjoy!
Home fries with poached eggs
3 medium Yukon Gold potates, scrubbed and cut into 3/4″ dice
3 tablespoons margarine
1 small onion, finely chopped
1/2 teaspoon paprika
1/2 teaspoon table salt, or to taste
ground black pepper
2 tablespoons white vinegar
Arrange potatoes in a large microwave-safe bowl, top with 1 tablespoon margarine, cover and microwave for 5 – 7 minutes until edges of potatoes begin to soften. Shake the bowl to redistribute the potatoes midway during the cooking.
Meanwhile, melt 1 tablespoon margarine in a large skillet over medium heat, add the onion and cook until softened and golden brown. Transfer to a small bowl.
Melt the remaining margarine in the empty skillet and add the potatoes, packed down. Cook without moving, until the underside of the potatoes is golden brown, about 5-7 minutes. Turn the potatoes, pack down again, and cook until well-browned and crisp. Continue cooking, stirring every few minutes, until potatoes are crusty and golden on all sides. Stir in the onion, salt and pepper to taste.
About 10 minutes before the potatoes are done, bring a medium pot of water, with the vinegar, to boil. Turn the heat to a gentle simmer, and add the 4 eggs. Cook until the whites are completely set, about 3-5 minutes.
Taste the home fries for correct seasoning, and dust with paprika. Plate the potatoes, top with eggs, and sprinkle with a little paprika, salt, and pepper.
