It’s easy to grill zucchini. You cut thin strips lengthwise and lightly baste in olive oil. Once they’re charred on both sides, remove and plate them, then baste with this easy marinade:

2 tablespoons white wine vinegar

2 tablespoons olive oil

1 clove garlic, minced

salt, to taste

chopped fresh mint

1/2 teaspoon sugar, to balance the vinegar

Easy-peasy.
