I prepared this dish and assembled it the night before, and when I came home from work today, I simply threw it in the oven and presto! Delicious dinner after a hard day – what could be more rewarding (besides having the next day off maybe?) This is very easy to make. I hope it becomes a regular on your dinner menu. Oh, and, as always, never any dairy. Enjoy!

4 layer tortilla bake

1 tablespoon olive oil

1 small onion, chopped

2 garlic cloves, chopped

1 large head of broccoli, cut into small florets

1 1/2 – 2 cups cooked chicken, diced

1/2 teaspoon chili powder

1 small jalapeno pepper, seeded and finely chopped

1 15-ounce can of diced tomatoes

1/2 cup shredded soy cheddar cheese

4 eight-inch tortillas (either whole wheat or regular; corn or flour)

Heat the oil in a large skillet, and saute the onion and garlic until translucent. Add the broccoli and saute until just turning bright green. Stir in the chicken and the chili powder. Set aside.

In a small bowl, mix the jalapeno pepper with the diced tomato.

In an 8″ casserole dish well greased with olive oil, place one tortilla. Spread half of the chicken mixture on top of the tortilla, then place another tortilla on top of the chicken. Cover this tortilla with half of the tomato/jalapeno mixture. Next, lay a tortilla on top of this, and spread the remaining chicken mixture on it. Place your final tortilla on top, spread the rest of the tomato mixture on top, and then sprinkle the soy cheese on top of this all.

At this point, you can either refrigerate until ready to cook (like when you come home from work tomorrow) or place in a preheated 350 degree F oven, uncovered, for about 30 minutes.
