I hesitate to call this a recipe, as there are no measured ingredients, and I pretty much winged it as I made it. Whatever was handy in the fridge or on the shelf, I added to the basic components. The results were fresh AND refreshing: the perfect summer Italian-inspired salad, complete with soy mozzarella cheese! Enjoy.

Summer tomato anything goes salad

several home-grown or farm-ripe tomatoes, cut into large dice

a bunch of fresh basil, sliced

a cup or two of leftover cooked chicken, diced

a cup of grated soy mozzarella cheese

1 10-ounce can of artichokes, packed in water, chopped

extra virgin olive oil

red wine vinegar

kosher flake salt

freshly ground pepper

Combine the tomatoes, basil, chicken, artichokes, and soy cheese together in a large bowl. Drizzle the oil and vinegar to your liking, adjust the salt and pepper to season to your liking.

Like I said, I can hardly call this a recipe, and you can add (or subtract) whatever enhancements you see fit. It comes together quite nicely, makes a beautiful presentation, and tastes great. Serves 6.
