You don’t have to fry food to enjoy the good flavor and texture that frying imparts. With zucchini in abundance in the markets right now at the end of summer, it’s easy to prepare this vegetable so that it resembles a fried rendition. Oven-fried zucchini spears come out crunchy on the outside and succulent/sweet on the inside, without all the fat. What could be better? Enjoy!

Oven-fried zucchini spears

3 medium zucchini

2 eggs, beaten

1/2 cup bread crumbs

1/2 cup soy parmesan cheese

several shakes of garlic powder

several shakes of dried basil

coarse salt and freshly ground pepper to taste

olive oil cooking spray (or plain if that’s all you can get)

Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray with cooking spray.

Slice the zucchini in half lengthwise, then cut into spears. Combine the bread crumbs, soy cheese, herbs and salt and pepper, mix thoroughly.

Dip the spears into the egg and then into the breadcrumb mixture, coating evenly and thoroughly. Place on the baking sheet, and then spray each spear with cooking spray.

Bake for 12 minutes, then turn the oven to broil and cook until the spears become golden brown. This may take 1 – 3 minutes, depending on your oven. Serve with your favorite tomato sauce, dipping sauce, or just eat plain. Makes 4 servings.
