It looks good, and it sounds good. But something was missing. Maybe because I didn’t use any oyster sauce? Was there too much soy sauce called for? It didn’t hit me in the right spot, although my husband loved it. I’ll try it again some time, and tinker with it a little.
Chicken fried rice
2 cups cooked chicken, diced
4 cups cooked brown rice
2 large eggs, beaten
2 cloves garlic, minced
1/2 cup frozen peas
1/2 cup frozen corn (or carrots)
1 onion, diced
1/2 cup soy sauce
2 tablespoons oyster sauce
Heat a large pan or wok, add a teaspoon oil, and scramble the eggs. Remove from the pan and set aside.
Add 1 teaspoon sesame oil and stir fry the onion and garlic for about a minute. Add the peas and corn and stir fry until the vegetables are bright in color.
Add the rice and the cooked chicken and stir fry another couple minutes. Add the soy sauce and oyster sauce to the rice while stirfrying.
Add the scramble egg and mix well. Makes 6 servings.
