This is a family favorite, and one of my favorite go-to recipes. Cakey and fruity on the top, gooey on the bottom. It never lasts long when I make it, and it’s the perfect summer (or end of summer) cake. I make it dairy free, but you can use milk if you so desire. Enjoy!

Plum pudding cake

1 cup flour

3/4 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup soy milk

3 tablespoons oil

2 cups sliced plums (about 4-5)

1 cup packed brown sugar

1 teaspoon cinnamon

1 cup boiling water

Preheat oven to 350 degrees F. Use an ungreased 8×8″ or 9″ round pan.

Mix the first four ingredients. Beat the milk and oil together. Mix with the dry ingredients and pour into the pan. Top with the plums, decoratively. Mix the brown sugar and cinnamon together, and sprinkle on top of the plums. Pour the boiling water on top of the fruit. Bake for 60-70 minutes, til a toothpick comes out clean. Serves 8.
