Watermelon lovers, unite. This cool and refreshing salad pairs watermelon with celery, grapes, toasted almonds, and a light tossing of homemade coleslaw dressing. This works together really well. Perfect for July.

Watermelon Waldorf salad

2 cups cubed watermelon (3/4″ cubes, seeds removed, or buy seedless)

1/2 cup sliced celery

1/2 cup seedless red or green grapes, halved

dash of salt

1/4 cup coleslaw dressing (see recipe below)

2 tablespoons sliced almonds, toasted

Stir together watermelon, celery, and grapes in bowl. Just before serving, stir salt into coleslaw dressing. Pour mixture over fruit and stir until coated. Sprinkle with almonds. Makes 6 servings.

coleslaw dressing

1/4 cup Nayonnaise (vegan mayonnaise)

2 tablespoons white vinegar

1 teaspoon sugar

1/2 teaspoon celery seed

1/2 teaspoon dried tarragon

salt and pepper to taste
