Between the great flavors and the crunch and textures, this salad is a winner, hands down.
Cabbage salad with fresh herbs, peanuts, and grilled chicken (modified lightly from Kalyn’s recipe)
2 cups thinly sliced and chopped red cabbage
2 cups thinly sliced and chopped green cabbage
1/4 cup thinly sliced green onions
1/2 cup roughly chopped fresh mint, cilantro (I used), or basil leaves, or a combination
1/4 cup chopped peanuts
1 – 2 grilled boneless chicken breasts, cut into bite-sized pieces
2 teaspoons minced garlic
1/4 teaspoon tabasco sauce
3 tablespoons rice vinegar
1 – 2 tablespoons soy sauce
2 tablespoons tahini (I used), almond butter or peanut butter
2 tablespoons olive oil
2 tablespoons toasted sesame oil
Combine dressing ingredients, then taste to see if you want to add more soy or hot sauce.
Chop cabbage and green onions and combine in large bowl. Roughly chop herbs, add to the large bowl. Coarsely chop the peanuts.
Toss the cabbage-onion mixture with desired amount of dressing. Add the chopped herbs and chicken, and toss again. Arrange on serving plates and sprinkle each serving with chopped peanuts. Makes 3 – 4 servings.
