What a great idea! Thanks for the inspiration. This is not so much a recipe as an idea. Insert whatever filling you desire – this is easy and good cuisine. This lends itself to unlimited options and interpretations – explore.
1 package eggroll wrappers
2 tablespoons extra virgin olive oil
1 onion, sliced
2 stalks broccoli, chopped
2 roasted peppers, cut into slices
a half dozen or so sun-dried tomatoes, cut into slivers
2 boneless grilled chicken breasts, cut into bite-sized pieces
2 cups shredded soy mozzarella cheese
1 cup of your favorite prepared pizza sauce, or marinara sauce
Heat the olive oil over medium-high heat in a large skillet. Add the onions and saute, stirring occasionally, until starting to caramelize. Add the broccoli, turn heat down to medium-low, and cover, stirring occasionally, until broccoli just turns bright green. Remove from heat, and stir in the sun-dried tomatoes and chicken.
On a clean flat working surface, lay out one eggroll wrapper, looking like a diamond. Place about 2 tablespoons of the prepared filling into the center of the wrapper. Lay a slice of roasted pepper on top, followed by a small handful of shredded cheese.
Wet the edges of the wrapper with your fingers dipped in water. Fold the bottom of the wrapper up to make your diamond into a triangle. Fold the side corners in, and then roll the eggroll up to the top to seal. Place eggroll (seam side down) on a sprayed rimmed cookie sheet. Repeat for all the remaining eggroll wrappers. Lightly mist all the eggrolls with cooking spray.
Bake in preheated 400 degree F. oven for 15 minutes, turning halfway, until golden brown on both sides. Serve with your favorite dipping sauce. Makes about 20 eggrolls.
