Delicious – like regular gazpacho but with a sweet and spicy kick. All fresh ingredients make this extra good.
Live mango gazpacho (from Chow Vegan)
3 cups mango, cut into small cubes (about 3 medium-sized mangoes)
2 cup tomato, chopped small (about 3 medium-sized tomatoes)
1/8 cup diced red onion
1/4 cup minced fresh cilantro
1/2 red bell pepper, chopped small
1 teaspoon seeded and minced jalapeno (optional)
1 garlic clove, pressed or minced
1 tablespoon freshly squeezed lime juice
1 teaspoon chile powder
1/4 teaspoon cayenne powder
1 teaspoon sea salt, or to taste
1 tablespoon minced fresh Italian parsley
Mix all of the ingredients together well in a large bowl.
Transfer 2 cups of the mixture to a blender and blend on high speed for 20 seconds and return to the bowl. Mix, and if desired, chill for 30 minutes; otherwise serve immediately. Makes 4 servings.
