Honey Whats Cooking posted this enticing looking recipe and lured me right in. The house filled with hypnotizing aromas as the ingredients were added to the pan. Anticipation built awaiting the finish of cooking. Delight filled our eyes, noses, and mouths as we enjoyed this really great dish.
Potatoes and cauliflower cooked in cilantro paste (modified only slightly)
1 clove garlic
1/2″ piece of ginger
1/2 green chilie
handful of fresh cilantro
2 tablespoons water
potato cauliflower recipe: (aloo gobi)
2 tablespoons olive oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 red onion, sliced
2 plum tomatoes, chopped
1 cauliflower, cut into florets
1 large potato, cut into bite-sized cubes
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
salt to taste
Heat work or large pan on medium heat; add oil then add cumin seeds. Wait for them to sizzle, then add the turmeric. Saute for about 5 – 8 seconds. Add the sliced onions. Season with salt. Saute until caramelized, about 5 – 7 minutes.
Now make the cilantro paste. Blend or process all the ingredients.
Once the onions are done, add the cilantro paste and combine. Now add the tomatoes and cook for an additional 10 minutes.
Add the cauliflower and potatoes to the mixture. Season with the chili powder, coriander, and salt. Cook for 5 minutes uncovered; then stir and cover with a lid. Reduce heat and cook for about 30 – 40 minutes or until the cauliflower and potatoes are soft and edible. Stir frequently to avoid burning. Towards the end, I added a little water.
Turn off stove and add garam masala. Adjust salt and serve. Makes 4 servings.
