A delicious marriage of flavors, here is a Mediterranean-inspired dish that is sure to please your palate with every scrumptious bite. Enjoy!
Tuna nicoise pasta
1 tablespoon olive oil
2 shallots, chopped
2 cloves of garlic, chopped
1 onion, chopped
1 green pepper, chopped
1 16-ounce can of diced tomatoes
2 tablespoons of balsamic vinegar
1 tablespoon of tomato paste
2 teaspoons of sugar
1/2 tablespoon oregano
1/2 tablespoon basil
1 6-1/2 ounce can of water-packed white tuna, drained and broken into small chunks
1 cup of canned, pitted black olives, halved
2 tablespoons capers
2 tablespoons chopped parsley
freshly ground pepper, to taste
In a large skillet, saute the shallots, garlic, onion, and green pepper in the olive oil over medium-high heat, until everything begins to lightly brown (about 5-7 minutes). Add the tomatoes, vinegar, tomato paste, sugar, oregano and basil. Simmer until thickened but still slightly liquid. Gently stir in the tuna, olives, and capers, and simmer until thick and heated through. Serve over pasta, season to taste with black pepper, and garnish with parsley.
